"Chinese × French" is how Vea's Vicky Cheng describes his cuisine. Chinese dishes – using ingredients from Hong Kong, Taiwan and mainland China – are executed with French techniques, which Vicky honed while working at Restaurant Daniel in New York. The marble counter overlooking the open kitchen is the best place to enjoy the tasting menu (available as a six‑ or eight‑course experience). The menu always features the popular Chinese delicacy, roasted sea cucumber, prepared with seasonal ingredients; a recent variation was served on a bed of tiger prawn seasoned with Shaoxing wine. Wine lovers will also appreciate the Chinese wine pairing. A recent highlight is the Puchang Vineyard Clovine – a specialised sweet wine produced in Xinjiang.
