Pastry Chef

Wassim and Omar Orfali

International influences: Founded by Mohamad, Wassim and Omar Orfali, the Syrian brothers behind Orfali Bros (named The Best Restaurant in the Middle East & North Africa in 2023, 2024 and 2025), this little restaurant is big on character – in fact, it has so much personality that it's hard to define. Japan to Spain, Syria to France, its creative menu careers from cuisine to cuisine at breakneck speed, but don't mistake its eclectic attitude for a lack of substance: every dish offered at this one-of-a-kind eatery is made with pride, passion and intent.

What's the vibe? Cosy and social, the compact spot has a distinctly 1970s feel, with deep maroon walls, geometric flooring and wooden shelving showcasing various objets d'art. The focal point of it all is an open kitchen complete with a wood-fired pizza oven, bringing energy and a sense of theatre to proceedings. The soundtrack is suitably diverse, too, flitting from old-school Arabic pop to 1980s classics.

Minimum fuss, maximum flavour: Created more for enjoyment than for accolades, the food served at Three Bros is the kind of food the Orfali brothers like to eat themselves when they're off duty: it's vibrant, satisfying and, much like the decor, rooted in nostalgia. Expect hearty salads, shareable small plates and comfort-food classics with a twist.

Must-orders: No meal is complete without a portion of crispy, crunchy OB croquettes, made with mature comté cheese and served with truffle aioli. Other highlights include the smoky aubergine royale with beurre blanc, caviar and walnuts, the OB cheeseburger (a wagyu patty in a Hokkaido bun with Cheddar and house sauce) and the burnt leek and truffle pidza: a brown butter miso–topped pizza-pide hybrid.
