From farm to table: Since it descended on a renovated Art Deco gallery in the city's vibrant Guéliz neighbourhood in September 2024, Farmers has quickly become one of Marrakech's most desirable dining locations, winning acclaim for sophisticated dishes made with the finest seasonal ingredients. A focal point for locavores, it prides itself on serving food that captures the freshness and character of its agricultural origin.
Harmonious surrounds: Much as they did in their past life as an exhibition space, Farmers' interiors sit back so its artwork can shine. Neutral, natural, light and grounded, with an open kitchen for transparency, the restaurant's stripped-back decor subtly reinforces the health-giving qualities of the dishes on offer.
Scrupulous sourcing: Committed to sustainability, organic produce and ethical sourcing, Farmers partners with Sanctuary Slimane, a permaculture farm on the city's outskirts, to fill its kitchens with responsibly grown ingredients free from pesticides. With a philosophy that rejects additives and over-processing in favour of simple yet skilful seasonings, the restaurant transforms wholesome, vegetable-led dishes from support act to star of the show.
A taste of what's on offer: A proponent of time-honoured techniques like preserving, fermenting and slow roasting to harness incredible depth of flavour, chef Driss Aloui is the creative force behind Farmers' hale and hearty offering. His a la carte and tasting menus change regularly according to the yield from Sanctuary Slimane, but past favourites have included monkfish with aromatic beurre blanc, saddle of lamb with olive-almond salsa and glazed aubergine with tahini, smoked onions and black garlic aioli.
